Kitchen design: Why are sinks in front of windows, and hobs on solid walls?

Am having kitchen re-done (knocking wall down to make breakfast room) and I am struggling to find a new design that 'works'...

I want a double oven at eye level, but we will only have one solid useable wall left, and I was going to put the hob there too, but tis looking cluttered.

I have a gap of about 1 metre wall between two windows - could I put hob, with glass extracter fan there? Would need to move sink further along....

Why DO people always put their sink in front of the window?? Is it just so they can look outside when washing up?

Our last house only had one tiny half sink (and no draining board) when we moved in. It was horrendous. Things like baking trays, oven shelves, vases, big pans that couldn't go in the dishwasher had to be washed in the bath or a bucket outside. When our dishwasher broke down we had to do the washing up in the bath (for 3 long days). One of the first things we did was replace it with a proper sink.

Depends how much cooking you do though, I guess.

My friend has three sinks. A double one and then a little round one for handwashing only on the opposite side of the kitchen. It works well and when you wash your hands it isn't over the stuff in the sink that's waiting to be washed up.
