How would you organise this space?

This is in my kitchen food cupboard. I used to keep all sorts in there but have to decided to keep all the food in there and not lightbulbs, birthday stuff etc!.

I'm not sure how to organise it. (I have chemo brain fog.) as you can see I like to keep it well stocked.

What would you put where?

How would you organise this space?

Is it under the stairs with a sloping ceiling?
Could the lower shelves be on sliders??

It's in my kitchen but yes the stairs go above it.

It's fixed shelving.

I'm open to buying more storage to go in it.

It looks fine to me, better than my food cupboard. You could use clear plastic boxes that can then be pulled out to get to the stuff at the back. It honestly looks fine as it is though.

Issue seems to be deep shelves so put less used stuff in boxes at back then more used stuff at front. Would also echo…it’s not that bad.

I would get plastic trays that can be pulled out like drawers. Lay cans on their sides in them.
Buy an LED sticky light strip with a button push that lights up when the door opens.
If you want to be super organized, a whiteboard on the door let's you write what you have plus use by dates.

I’d probably keep it less stocked to be fair. Spice racks on the walls. And probably change the shelves completely to something like the ikea Joaxle or Boaxle. Turntable for sauces.

This is what was trying to get at.

Not sure where the high use stuff should be etc.

I feel like I've gone wrong somewhere because the largest shelf is going to be empty.

i like the space and see the potential
have you checked out Pinterest or simply google understairs pantry images.
i spotted this idea but it would involve some assistance with carpentry.

If you can’t replace with sliding shelves, use trays or baskets so you can pull them out a bit - makes it easier to use the back.

I’d look at adjusting the shelf heights, maybe adding a shelf rather than having cans double stacked (that’s a personal choice though)

A pantry needs at least one shelf with enough height for cereal boxes/ bottles of water

What helps a lot is designating space and then sticking to it. If I know I only have room for 4 cans of bean in my bean area, I don’t get carried away in a sale and I don’t lose track of what I have anymore because I know where to look for everything.

Eye Level, and easy to access with one hand is where your most used stuff goes.

Chocolate belongs at the back of the top shelf if you’re in a diet! And anything you’re stashing for Christmas - I have a box I can’t see into with no lid so I can slide in goodies I’m saving, but are out of sight out of mind.
