Can I prepare my veg for christmas dinner on christmas eve - or will it go funny over night?

Only doing the usual (carrots, potato, swede, parsnip, sprouts etc), so if I cover them with water and put in fridge will they be ok?

Salted water?

Or no water?

potatoes go black if not in water. The others... I've prepared sprouts and carrots before and left them dry in a plastic bag overnight. Parsnip and swede I have to leave for someone else to answer about!

just water....no salt until just before cooking.

and make sure they are completely immersed as otherwise the tops of anything will go brown!

and if no room in the fridge just leave on the side overnight and change the water in the morning. I do this every year and I am still ok

I've done that plenty of times - peel spuds, put peel in a pan, bin the spuds
