Burnt on grease on baking trays

I've only just discovered this thread so I apologise if the topic has been done to death, but, how do I get rid of months of burnt on grease etc on baking trays? I have 4 that are a real disgrace and apart from that they're in good condition. I've tried soaking them for days then attacking them with Brillo pads but that doesn't work.

I wouldn’t worry about it. As long as they are clean, the burnt on grease is just discolouration. They might not be shiny anymore but It won’t hurt anyone and will make the pans easier to wash and create a non stick effect.

It sounds odd but if you buy a cast iron griddle or carbon steel wok or some such piece of heavy duty kitchenware you have to ‘season’ it before use. That effectively entails rubbing it with oil and heating it to a very high temperature over and over agin until it turns dark. It’s then water resistant and wipe clean. The Chinese have a saying - the blacker the wok, the better the cook.

You have unknowingly seasoned your trays. Have a gold star.

Just to add - I spent this afternoon at a baking class at a very bougie cookery school in the centre of London. Over the course of the class we used many baking trays and they were all blackened and discoloured through use. All our bakes were placed on baking parchment before being put in the oven and they came out crisp and clean.

But if you want the shiny look -Astonish paste. Probably you can make your own using bicarb or similar.

Ovenbright oven cleaner. Just brush them with the solution and leave overnight in the thick poly bag which is included in the box.
