Hi,

My partner has left and we are having to claim universal credit. It is going to take a while for our claim to be processed so I'm trying to make what little money I have left last.

Can anyone please share your favourite budget recipes or good websites where I can find some please?

I'm fairly confident in the kitchen but have a very fussy 6 yr old so ideally looking for non spicy, not too adventurous dishes Grin

Thank you :)

I'm sorry to hear about your partner. hopefully the recipes link below!

lord woolton pie

scrambled eggs and beans on toast

zucchini pizza- cut the zucchini length ways, spread on pureed canned tomato and cheese, then bake at 190* for 15-20 mins. you can use any leftover zucchini (if you buy it in a 4 pack for example) to make zucchini noodles, just grate the zucchini into 'noodles' and fry them until they are soft. add cheese or pesto.

all the best x

Thanks @sleepismysuperpower1 :)

Ooh I like the sound of the lord woolton pie especially!

After googling I have discovered cooking on a bootstrap too - lots of ideas on there! :)

I was going to suggest Cooking on a Bootstrap but you have already found it. Jack Monroe has so many different types of recipe and having been in the same position as you, she know what she is talking about.

BBC good food has so many recipes, including a budget section:

www.bbcgoodfood.com/recipes/collection/budget

Hope the wait for Universal Credit is not too long.

This is a great website too @Absoluteunit: eatnotspend.com/

(There's a cookbook too but I think most of the recipes are on the website!)

Cooking on a Bootstrap is really good, Jack Monroe's Tin Can Cook is 99p for the Kindle at the moment too.

Good luck with your Universal Credit claim, I hope it comes through soon. Do contact your local food bank if you need to though Flowers
