induction vs gas hobs

Gas definitely - more control and instant heat - also, you can't stir fry on an induction. IMHO of course!

Also - there was a thread recently about getting marks out of induction - they're shockers for staining. Get the gas hob - you know you want to..........

although watching reruns of heston blumenthal tonight, i noticed he had an induction hob...

Just moved from gas to induction - missing gas dreadfully. Induction not nearly as reponsive, stains badly, stays hot after you've turned it off.

Induction hobs are the fastest responding and most energy efficient of all.
Easier to keep clean, because the hob itself doesn't heat up so no food burns on.
Safer because they cannot be turned on by accident if there is no pan there and because the hob itself doesn't heat up.

LongDeadMother.... are you sure you're talking about an induction hob here, and not just a ceramic hob (not the same thing)?

induction by far

our looks like new after 5 years of heavy use and is extremely easy to clean - used to loathe gas for that.

fantastic to cook with, you're in complete control of the temperature, ours also has a boost function so you can boil a big pan of water within a couple of minutes.

The only downside I can think of is that many pots and pans aren't suitable for induction, and the ones that are are usually the pricier sort. Still, we got an expensive pan set as old as the hob still going strong so it's worth the initial outlay. Also, if you ever go to Spain on holiday you can stock up on induction pots & pans there - much more common in Spain and lots cheaper.

can you recommend any brands?

warthog, yes first had halogen and then had gas (last one was a big posh Smeg range type thing) for years before getting an induction hob.

I would think any major brand will be fine. Ours is DeDietrich.
