I want to slice and freeze the remains of the roast ostrich. Is there something I can interleave with the slices so they can be taken out individually and not as one frozen lump?

I used baking parchment last year with my sliced ham-worked well. Greaseproof paper is the same.

Have not used baking parchment, will give it a try. Is it a PTFE product?

Cooked meat will freeze /defrost better coated with sauce or gravy; I use ordinary sandwich bags. Sorry don't know about PTFE products.

grrrr

too late. Already in the freezer.

I wonder if I should open the tubs and pour some cold stock in tomorrow. Stock is simmering now.

I've not actually done this, danger of leaving empty air spaces at bottom, so maybe just try a few tubs, tapping them on worktop to encourage stock to flow between pieces of poultry - good luck.
