Best, sharpest knife for chopping food

Not sure if this is the right thread but I'm sure there's some bright spark who will have some good ideas! Am looking for a really good knife for chopping veg, anyone got any recommendations? Don't want to spend a fortune just something mainstream but effective. Any help gratefully received!

I've got a sabatier and, sad as this is, I love it. If it wasn't so sharp I'd stroke it lovingly each night as I put it carefully away.

I swear by Kuhn Rikon knives. I've even bought a set of my parents and in-laws. They're just so much sharper than others I've had.

And you can get them in TK Maxx a lot of the time, but shh! That's my secret!

Love love love our Globals. They are pricey but worth it and fantastically sharp.

I have Globals. Been collecting them as birthday/Xmas gifts for years. Also have a minosharp water sharpener which needs doing every now and again.

There's a short but fat blades Japanese vegetable knife that's a good starter/all rounder.

Hmm just looked at Sabatier website. Looks good but bit confused at the choice of knives! Which would be a good all purpose one that could chop both herbs and sweet potatoe etc! ( there's a whole world of knives out there I never knew about...)

I have a slicer and a parer. I have no idea what a parer is but it works well at chopping and slicing everything so far, as does the slicer! We have a sharpener as well but they don't need doing very often at all.

I have a serrated kitchen devil. They cost about five quid. In fact i have three of them. I think they're good!

Globals. Bought 5 years ago. Sharpened regularly. Still going strong. Pricey but have been well worth the money,

Global fan here too.

Bought a set of knifes (different brand - Berghof I think) at the Ideal Home Show for about £70. Last about two years before we chucked them out.

Global has lasted about 5 years now and still going strong! Sometimes, you can find really good deals online.

I picked up one by Royal Doulton with Gordan Ramsey's name on it, reduced to next to nothing in a sale. It was just to replace an old one, as it was so cheap, but I was so impressed. It's a bit scary how sharp it is, but it's showing no sign of blunting yet, which is good as I've lost the flipping sharpener thing. Blush

We were bought a Sabatier set for our wedding a few years back, haven't been sharpening them Blush but they still work very well and don't appear dull when chopping. DH, on the other hand, is a geek for sharp knives and thinks they would be much better sharper so with a sharpener he'd probably think they were great instead of good. However, he doesn't complain about our knives (like he does when cooking at his family's house) so they must be doing alright.

I also second the Kuhn Rikon. Apart from the fact that they can come in bright colours I know it's not important but..., they do seem to stay very sharp. The ones I've used have come with individual covers and I think the cover keeps them sharp/sharpens on removal. Either way, they're good.

However if we had a lot of money, DH would be off to get some Japanese folded steel knives as one of his first purchases.

I like Sabatier style (French cook's) knives.

It is not a single brand, so quality (and price) varies with maker.

Even if they are sharp when you buy them (they might not be), you have to keep them sharp. Use a magnetic rack, don't put them in a drawer. Use a steel frequently (it is easy really) and get a sharpening stone of some kind (not metal scraping wheels). I use a small electric sharpener with a grinder, an electric motor, and an angle guide. There may be better ways.

Use a chopping board made of wood or plastic, not steel or glass. Don't get the blade stuck in something and wiggle it side to side.

if you can't cope with sharpening, get serrated knives.
