my fairy cakes are all wrong.

I have tried all sorts of recipes and my cakes always spread go flat are dense or very fluffy but flat help!? Please.

Right so just been shopping got some stork, McDougall's special self raising magic super flour a deep cupcake tin for 12 and a pack of penguins to de-stress later lol fingers crossed wish me luck!

A tablespoon of baking powder is too much if you're using SR flour. A teaspoon would be enough.

Agree with the creaming fat and sugar first method, then add beat in eggs with a tablespoon of the flour/bp mixture to stop them curdling, then beat in the rest of the flour.

I disagree about not over beating at this stage, as I was always told by grandmother that you need to beat air into the mixture.

Getting the right size tin is essential.

Also - just a thought - are you pre-heating the oven? Make sure the oven is at the right temp before you put the cakes in.

just re-read your last post. If you really are making fairy cakes, you don't want a deep cupcake tin. You need a fairy cake tin. Fairy cakes are quite shallow - cupcakes/muffins are somthing else entirely.

Well made the cupcakes/fairy cakes 24 vanilla, 24 coffee and 24 chocolate. Majority of them rose really well. Did the traditional method, used a fairy cake tin and a cupcake tin to see which worked for me and result with traditional method and deep cupcake tin chocolate were the best out of all of them yay! Thanks to all of you and a little help from sil.

I will need a Wine later and maybe a cheeky cake! Lol dh was proud Lil and kids thought sil made them :( mummy bakes pancakes. ooh who's the mummy! :) as you can tell am rather proud of myself hehe. Can do school cakes now and not be ashamed!

It's that getting over the inital hurdle isn't it?

Until two months ago I could bake house bricks, not bread. I have now cracked it and I don't see any problems any more.

Seem to be making them every other day now doradoo. Hope the novelty with dh and kids wears off soon! Lol I am now low on baking supplies :)

Made some scummy coffee cupcakes last night with coffee butter icing and choc sprinkles they look lush. Need to invest in piping bags and nozzles. A dollop on a spoon and swirling with a fork don't come out quite so well. Tasted good though! Should cut down the cake making not good for the old diabetes oops!

pip trying getting some cooking chocolate like scotbloc and popping it in a glass dish over a small saucepan on the stove with water in it, melt it and our it on fairy cakes with sprinkles on. It sets like rock and tastes lush when you bite into it. I'm just decorating mine like that now!
