Christmas cakes with glazed fruit and nut topping instead of icing

Hi

I know it's a bit desperate to avoid marking keen, but I've just made the Christmas cake today and want to decorate the top with glazed fruit and nuts instead of royal icing.

Are there any domestic goddesses on here who know how this is done? Do you toast the nuts first? Is it a special glaze or just sugar, cornflour and water. Are the fruits dried or glace?

Thanks.

This www.deliaonline.com/recipes/type-of-dish/sweet/glazed-nut-topping.html might help - from Queen Delia herself!

From reading online, fruit tends to be glace -

I am sure Nigella Lawson did one but can't find the recipe anywhere!

Good luck with the cake! I put off marking too

Delia does that with her Creole Christmas cake. It's delicious, and much easier than icing. It's the one Sugar has given you in the first link.

So glad that you've asked this, racingheart, as that's what I'd like to do. (Loving the salami slices on the second cake!)

Wasn't so keen on the look of the 2nd cake either hobnob!

Thanks - just what I was looking for.

LOL at salami.
