Tonight we're having kedgeree:
Poach some smoked haddock/cod in a mixture of milk and water. Remove from the heat, drain the fish but reserve the poaching liquid. Cool, and when cool, flake the fish (make sure any stray bones are removed)
Cook a small portion of frozen peas.
Gently fry a diced onion in butter, with a little oil added to stop the butter burning, and add some curry powder/paste - you're not looking to make it hot, just to give it a curry flavour. Season with black pepper (don't add salt at this stage, as the fish can be a little salty)
When soft, tip in some basmati rice and stir to coat the rice in the butter.
Gradually stir in the liquid you used to poach the fish and simmer until the rice is cooked (adding more water if you need to).
When the rice is cooked, add the peas and flaked fish. Check the seasoning, and add salt if necessary.
You can also add a little cream, some chopped parsley or coriander (according to which you prefer), and some chopped hard boiled eggs - DS2 doesn't like eggs, so if he's eating it then I leave these out.
When you serve it, dust a little cayenne pepper on top for some colour contrast (be careful not to add too much as you will add extra heat!)
