coronation chicken skewers with pitta bread and salad

Dice chicken and marinade in 1 tbsp curry powder mixed with some olive oil in a bowl.
Thread on skewers and grill
warm pittas and cut open
Serve with salad and squeeze of lemon.

(We're having this tonight!)

pasta with veg.
Boild pasta, chop up laods of veg, stir in loads of pesto, grate some cheese to sprinkle on it.

Keema Curry Pie - cooked mince and onions and add curry powder/finly chopped ginger. Boil potatoes and parsnips (or carrots) - mix in butter, juice of one lemon, and freshly chopped coriander. You can add some chillis too if you like it a bit spicier. Bake in oven til golden.

Tonight we're having kedgeree:

Poach some smoked haddock/cod in a mixture of milk and water. Remove from the heat, drain the fish but reserve the poaching liquid. Cool, and when cool, flake the fish (make sure any stray bones are removed)

Cook a small portion of frozen peas.

Gently fry a diced onion in butter, with a little oil added to stop the butter burning, and add some curry powder/paste - you're not looking to make it hot, just to give it a curry flavour. Season with black pepper (don't add salt at this stage, as the fish can be a little salty)

When soft, tip in some basmati rice and stir to coat the rice in the butter.

Gradually stir in the liquid you used to poach the fish and simmer until the rice is cooked (adding more water if you need to).

When the rice is cooked, add the peas and flaked fish. Check the seasoning, and add salt if necessary.

You can also add a little cream, some chopped parsley or coriander (according to which you prefer), and some chopped hard boiled eggs - DS2 doesn't like eggs, so if he's eating it then I leave these out.

When you serve it, dust a little cayenne pepper on top for some colour contrast (be careful not to add too much as you will add extra heat!)

Chicken breasts and thighs, roasted in the oven with chopped red onion, red pepper, and chorizo.

Served with whatever carb takes your fancy (In summer I do it with roasted veg couscous, in winter its' more likely to be mash)

To feed a family of 2+2:

Enough chicken pieces to feed everyone (I use breast fillet - but you could use thighs etc.).
1 pack of ready made polenta
250g cherry tomatoes
small amount of grated paremsan (or strong cheddar)
some garlic
olive oil
some herbs (rosemary or thyme are best).

Break polenta into small chunks in a roasting tin.
Toss it in the cheese.
Bung chicken on top of polenta.
Scatter tomatoes and chopped garlic over the chicken/polenta.
Drizzle over some olive oil.
Cook at 180 for about 25mins til the skin goes brown.

Eat with green beans or salad.

Fish pie (seeing as there is no fish), or kedgeree, if kids prefer that...... both cheap easy and good for you, while also being yummy comfort food for autumn. Home made pizza also a hit. (I know you said one, but Im hungry now......) Pudding? what about a pudding pizza with the last of the dough...put a smear of nutella and sliced pear or banana and a sprinkle of brown sugar. serve with ice cream. Yum.

You can do pretty much any kind of fish fillet - salmon, trout or what have you (my two faves) for 20-25 minutes at gas 4 in a parcel of oiled foil with a few sprigs of herbs and slices of lemon. With some new potatoes and veg you've got dinner in little over half an hour, it's good for you and the kitchen doesn't even smell fishy because all the steam stays in the parcel.

Also Sainsburys have salmon fillets for half price this week.

If doing trout I tend to toast some flaked almonds for that 1970s touch.

BIWI you can save yourself a pan if you just sling the peas in on top of the rice for the last 5 mins or so of the cooking time. Grin

I love kedgeree and so does DH. DD still needs some more convincing, however.

lamb meatballs in spicy tomato sauce served on couscous is a favourite in our house at the moment.

Minced beef hotpot (or you could use other mince, lamb, Quorn,turkey).

Get some potatoes and slice them. Parboil them.
Fry 1/2 pack of mince and some chopped onion or leek.
Make up 1/2 pint of gravy and add to the browned mince.
Throw in a couple of handfuls of frozen peas.
Reduce liquid by simmering then transfer to an overproof dish.
Arrange potatoes on top.
Shove in oven at 200 deg C until potatoes browned and crispy.
Serve with veg.

Chilli

Brown some onions, garlic and mince in a little oil
Add some grilled vegetables (peppers, aubergine, courgette, etc - Ocado/Waitrose's frozen grilled veg are ideal)
Add 1tsp on: cinnamon, cumin, ground coriander
Add 3 cardamon pods
Add tin of mixed beans
Add tub of passatta
Add a good squeeze of sweet chilli sauce to taste
Season
Cook for about 20 minutes
Can add some fresh or dried chillies to taste if you wish

Freezes really well and chilli always tastes best on reheating.

chicken curry

Put 4 cloves garlic, 1 onion, inch fresh ginger, fresh coriander, red pepper, curry powder, cumin, sunflower oil into blender, blend until smooth.

Heat oil in pan, add cloves and cardamom pods, add diced chicken.

Add paste from blender, heat for 5 minutes, add a bit of boiled water, simmer for another 5 minutes. Throw in some frozen green beans. Slowly add greek yoghurt. Simmer for 30 minutes.
