Walk-in pantry setup. Blank canvas

I have a walk-in pantry. It’s pretty much a blank slate with only 2 shelves in it. So it just becomes somewhere for kitchen related junk to accumulate or go to die. But now my chest freezer has died which I won’t replace. This leaves me with a blank slate for shelving and design overall.

Ive got no idea where to start. I think it’s shelving over cupboards needed. Storage for plates/bowls etc, tins and store cupboard food, herbs and spices, small kitchen appliances, cans and bottles, But something that doesn’t become a dust and cobweb magnet?

any advice please?

I wouldn't put any fixed shelves in below counter top height in case you end up wanting to put an appliance in again some point. We have some free standing shelves in our bottom bit. I have seen people put a stone worktop in to store stuff on and keep it cool?

Skinny shelves on the top so that you can only store stuff one item deep (no loosing things)
A counter
Deeper shelves below for appliances, big dishes and less used items..but no doors so that you can see everything
Potentially a place for recycling, if you dont already have somewhere convenient
a whiteboard or chalk board somewhere to keep a shopping list or jobs list
I also have a ceiling pot rack with hooks so I can hang lesser used but important saucepans etc, but that really depends on your ceiling height.
