How thick for kitchen worktops?

Really wanted chunky concrete worktops in new kitchen, but serious doubts about practicality (staining etc) means I'm now going for caesarstone: organic white for the countertop backing onto the wall, and oyster (which looks a bit like concrete) on the island opposite see this as an example .

Not sure whether to go for super-thin (13mm) worktops on both, classic 30mm worktops on both, or whether to go thin on the wall counter and contrast this with a chunky island counter (which we would do with a mitred edge of 50mm). Leaning towards the last option, but a bit worried that a mitred edge might look a bit rubbish, especially if the joins are at all visible.

Any views on what might look best? Too many decisions to make on the whole kitchen refurb, and I'm faltering over this one!
