I've flown easyjet with dd aged 20 months, although not to Paphos. You can usually take the buggy right up to the boarding gate, but expect to get it back on the luggage carousel at your destination. You will have to fold it to go through the security machine. In my experience, it's not worth paying easyjet extra for priority 'cos at some airports you get transported to the plane by bus, and they should give you 'special assistance' boarding, which is pretty much the same, free when you check in.
UK security bods (especially those at Bristol airport) are generally unhelpful jobsworths, so don't expect any help lifting your buggy onto the security x-ray thingy while controlling a toddler at the same time, although their European counterparts are usually much more family friendly and helpful, and in Toulouse a helpful chap folded the buggy for me and put it up again the other side. The Bristol brigade insisted dd walk through the security arch on her own, which took a lot of encouragement, coming back I carried her through.
It helps if you put any drinks you take for your ds into a tommee tippee cup or whatever you use or a bottle - security will take any other drinks off you. Also, have a small clear plastic bag in your handbag to put in any drinks/purees/nappy cream etc to go through security. If you do this in advance, it makes for less stress at the airport.
I always head for the back of the plane, as that way I don't cause a holdup while you try to sort myself and dd out in our seats. Other travellers are often very helpful if they see a parent struggling with bags and infant.
