Family holiday recommendations for half-board with child and partially sighted MIL

Looking for holiday destination/hotel recommendations for me DH, MIL and DD(5)
DH is adamant he isn't going to Balearics, the canaries or turkey / doesnt think there's enough for DD.
Also not sure what to do about rooms possibly just getting a separate room for MIL but she is partially sighted to unsure. Had thought about hotels with villas possibly as we would like to be at least half board. Really don't want to do self catering.
we've left it last minute so appreciate availability might be low but if any one has a steer/ideas it'd be greatly appreciated!!

What does this mean?! Does he mean there isn't enough for her to do? In the whole of the Balearics, the Canary Islands or Turkey?! 😂

I know the Ikos resorts have a good reputation for disability access - there's one in Andalucia that's supposed to be beautiful, and has kids clubs where they separate out the teenagers from the little ones so your DD would have plenty to do.
