3 nights without children. Relaxed and cheap?

My mum has offered to have the kids for a few days in June so I'm looking at booking flights somewhere.
I'm looking for somewhere that we can relax but we are not beach people. Maybe a small city or town to wander around, good food and drinks, things to see and do but not an on the go busy city break. Any ideas?
We have previously been to Budapest and loved it so same kind of vibe. I'm happy to fly in to somewhere and then catch a train for an hour or so. Thank you for any ideas.

How about Turin? Much quieter than many other European cities and a lovely relaxed vibe. Enough to see that you won’t get bored but not so much that you feel you need to cram everything in. On one day you can also get a train into the Alps for a day in the stunning mountains. Great food too!

Thank you everyone! Seville was my first thought but I've heard it is really hot in June? I hadn't considered Plm, but this might actually fit the brief. I love eastern european countries but I can't find any cheap flights for the week that we have, but I will keep looking.

I went in May and it was pretty hot then. Granada is lovely though the Alhambra needs to be booked as it is busy.

Track down the cheap flights first. We’ve had a weirdly good time in some random Polish towns - very cheap!

Not sure why that's weird ! I am of Polish heritage (but born in Yorkshire). Poland has some stunning towns

Valetta in Malta .... 20 min from airport, very pretty, some amazing restaurants. Should be a great temperature in June and it's almost surrounded by sea.
