I think to find something you'll need to be flexible or throw money at it.

If you're wanting to go abroad choose the 'everywhere' option from your local airport(s) also see if there's any packages with Jet2, Tui or BA depending on your favoured airports, to save you having to find accommodation separately.

Or if you're wanting to stay in the UK you could look at hotel deals but I'd expect them to be expensive for what's on offer, likewise Center Parcs or similar.

Are you wanting catered/AI or self catering? If in the UK you could buy loads of good ready made food and plan to eat out on the first couple of days.

I checked Skyscanner and you can order flights to "anywhere" by price. Lanzarote came up before the UK surprisingly.
Its not a bad shout actually although peak season. The flights are 4 hours so not great for a short break but not out of the question. At least it should be warm.

Otherwise the UK can be surprisingly good for a short break. Suffolk villages are quintessentially English Christmas and it's less wet on the east. See what Airbnb has near Bury st Edmunds - if you don't live there already !
We always go away for Christmas. Just load up the car and go. The advantage is you aren't always popping to the shops for stuff. As long as there's a shop for genuine must haves, you can just tune out and look round wherever you are.
