Easy self catering meals

I’m going self catering for 5 nights to a hot beach holiday destination. I will cook for 2-3 nights.

What are some easy but yummy meals to make? I was thinking of taking those nice curry kits and doing a curry one night.

You are planning ob taking a curry kit in your luggage? Where are you going? Surely they’ll be supermarkets there?

Hot country… salads, salmon, local specialties, bread, cheese, cold meats and a nice glass of red

But they’ll be food shops
and lovely fish no doubt
it’s a couple of nights… take a risk and just get some local bits

Yes take the curry kit so you have the correct spices and seasonings in the quantities you need, but definitely buy some fresh fish/prawns/vegetables/something to form the substance of your curry.

I think the curry kit is a really
good idea. Then you buy the veg and meat there.

I would be putting a roasting tin in the bottom of my suitcase for cooking easy traybake dinners! If you pack other things inside it hardly takes any space...

Or drop the owner a line to enquire if a roasting tin provided at the self catered accommodation. I would be surprised if wasn’t one provided

Not been to the Bahames but have gone self-catering in St Lucia and Barbados. Shops had plent of basics, local stuff and plus spices. For 2-3 nights you could easily do a curry, risotto/paella etc, which are good in hot weather and only require one or two pans. Pasta and salad also easy to do. We made some marvellous rum cocktails full of chopped fresh fruit too.

Anything you can pan fry, with salad and couscous, - meatballs, fish fillet in butter, chicken breast, lamb chops etc

Tsatsiki, taramasalata, cherry tomatoes and warm pittas.

Do be careful about taking foodstuffs into other countries. Some of them have very strict rules about things like that. I'd check what you are allowed to take in first. I probably watch too much customs Australia!!

I like to keep evening meals really simple when we self cater, as it always harder cooking in an unfamiliar kitchen.

Fresh fish, chicken or meat, with a mix of fresh veggies (all in pans into the oven)

Cold meals with nice cheeses / hams / pate with salad and fresh bread.

Roast tomatoes and other veggies, mixed with cheese and pasta.

We generally always eat out at lunch and have something more exciting then
