Holiday help

I’ve not been abroad for years, I hate flying but now I have kids I can’t pass that fear onto them. So I’ve put my big girl pants on, gut the passports and am looking at holidays.
After getting over the shock of how much a week in Spain costs, I think I’ve found something suitable.
couple of questions;
Am I along the right lines thinking going all inclusive for our first holiday is just the easiest way, or is b&b perfectly doable? I’m looking at a hotel with plenty of pools, beachfront, entertainment, kids club etc
if I didn’t go all inclusive, is it usual to have to pay extra to utilise all of the facilities on offer (such as kids club)
Also the flights are at great times but as it’s a bit last minute, I can’t choose seats on the plane together as they all look booked, so it’s odd seats here and there. How will I manage with 2 children 6&8 on their first flight?
I wouldn’t expect people to move, but is it unreasonable of me to expect the kids to just get on with it?

We stayed HB in a hotel that did all inclusive and were still allowed to join in the adults activities like archery and water aerobics for free, don't know about kids clubs as we're child free but I would have thought you could, I think AI usually only applies to food and drink.

Whether AI is the best choice depends on what you value. If you just want to spend lot of time at the pool with everything there without having to think too much or consider the cost, especially for endless drinks and ice creams then it might be OK.

However if you want a nice dining experience with freshly cooked food served to you at an outdoor table, you won't get that unless it's higher end AI. Plus it's limiting if you want to spend days at the beach, waterpark etc as you'll end up paying more on top of AI. We usually self cater or B&B and eat out least once a day and top up with easy food like BBQ, ready made salad, cheese and drinks and snacks from the supermarket or convenience store but obviously you need a kitchenette at least for that which you won't usually get in a standard hotel room.

On flights, they don't always offer all seats at the 'pay to choose' time, so there's usually flexibility at check-in time to put young DC near to at least one parent. We never pay and sit together for free at least 90% of the time but we're a couple who travel in term time but the flights are usually full.
