Self-catering in spain

We can't go all-inclusive due to issues around DD's eating and can't travel too far away either so mainly looking at Spain but everything seems to be all-inclusive. Any self-catering or B&B hotel recommendations please? Preferably with a good pool.

Airbnbs seem just as pricey and with the recent droughts I don't think they can guarantee that their pool will have water so that's why we're looking at hotels.

There will be thousands and thousands of non-AI options on a site like booking.com. You can choose a specific town, or a whole island or region to where you’ve located cheap flights already. There are filters such as swimming pool, breakfast included, or free cancellation, or rating…

I think your fears about pools are unfounded - there are a gazillion villas with pools on sites like Vrbo, you can filter by bedrooms, price, facilities etc then get some cheap flights.

Thomas cook website is giving me 1882 results for room only or B&B on a random Saturday in July to Spain!

Just go on Jet2 website choose your destination and select self catering.

You may be right to avoid private rentals - there was most definitely something in the media last year about a period in which people weren't allowed to fill their private pools in certain areas within Andalucía. So this would cover AirB&B type apartment lets in residential complexes and villas. I didn't hear anything further about this remaining in force during the main tourist season but it was definitely a thing.

You need to look at apartment complexes which are fully holiday/tourist accommodation - probably called apart-hotels - as @Boffle says, if you put a filter on self catering on Jet2/Tui/other provider this will then show you this type of accommodation.
