What to cook in Japan

Not sure whether to put this in Travel or Cooking!

We are going to Japan for a holiday soon and have three nights in an apartment with a kitchen.

It's just occurred to me that we will be able to cook Japanese meals with Japanese ingredients but I'm stumped as to how to make the best of this opportunity.

I'm a good cook, we will eat anything, and would totally be open to something more unusual.

So wise Mumsnetters, do you have any dishes you'd recommend- using ingredients that maybe aren't as readily available here?

Go and eat out!!!
Or, if you need to cook, make sure you have some eggs, and soft fruit in season.

We cooked breakfast, but usually had lunch and dinner out. It was all amazing.
Even sushi or sandwiches from somewhere like 7-eleven were amazing.

Just eat out. Food is cheap. Even takeaway food from the convenience store or supermarket is v good quality. Supermarket sushi is better that high end UK sushi restaurants
The kitchen won’t have an oven as you know it, it will have a type of fish grill, a microwave and two hobs. That is the standard, unless you’re in a high end establishment catering for expats only. So whatever you cook will have to be on a hob.

Thanks, yes we will be eating out for the majority of the holiday so it occurred to me that for these few days I'll have the chance to go to the supermarket and cook something myself for a couple of meals.

It will be in Kyoto so I know we could eat out but I enjoy cooking so thought it might make a nice change. I figured the kitchen would be a hob and a microwave so similar to European Center Parcs!

Sorry I wasn't clear - we are in Japan for two weeks, so will be eating out most of the time, except for these three days in the apartment. I do enjoy cooking and thought it might be a fun thing to do.

Agree about eating out because Japanese ingredients can be found back home but authentic Japanese cuisine (imo) is harder to come by. However, if you're staying near a fish market and really fancy cooking, you may find seafood that's not available back home.
