1st trip 'abroad' in 21 yrs. Help pls ?

Last got on a plane in 2001.
Kids, 18 & 15 have never been outside UK. I am ambulant disabled (crutches). Kids have ASD. Not much money.
However I've been offered a budget of £2-3k (with some specifics) to take us on a European trip, (to inc Malta - told you it was specific!). So, I've ordered passports but got a bit scared now ...

Is this possible? I've got dreams of inter-railing / hostelling for a week, down thru Germany & Italy, then a long wkend in Malta then fly home *Scotland). I've no idea how I'd plan it, or if I'd really need 4x that much £.

Any suggestions please ?

Am going to cost trip as planned vs cheap week in Malta & then 2nd interrailing week next spring (to see more of germany / italy in less of a rush & less busy/hot). I've no idea of a 'top 10 things to see in Europe' so I need to research.

Fly to Munich with Ryanair or similar. Pack light, one small backpack each.

3 nights Munich

Train over Garmisch (get off for a couple hours) to Innsbruck - buy tickets on the day no need to book ahead.

Innsbruck 3 nights. Get the Innsbruck pass. Awesome.

Train to Venice - 3 nights. When it becomes too crowded take the waterbus all the way to Lido.

Fly to Malta 🇲🇹 5/6 nights
