Rotterdam and The Hague - need advice please!

We're looking at going to The Netherlands for Easter weekend. Just me and DP. Ferry from Harwich.

Not sure whether to spend 2 nights in Rotterdam and 2 nights in The Hague, or to stay in Rotterdam and just go to The Hague for one day. Also would love advice about things to do, restaurants etc, and any other tips. We love walking, beer, eating (any cuisine,) bit of shopping and museums

I'd probably opt for two nights in each. I did four nights in each in September and also used them both as a base for trips further afield. As you like walking, having a couple of days in The Hague would be good as you'll be near the lovely beaches and dunes along the coast.
In Rotterdam I'd recommend a boat tour of the harbour area (Spido, among others, do them) and the Euromast. Also plenty of museums there.
In The Hague, Madurodam (Holland in miniature theme park) may be of interest, as well as just wandering around the historic city centre including the Hofvijver lake by the Binnenhof (Dutch Parliament). Again many museums though admittedly I didn't get to see any this time.
One thing to bear in mind is that there are many long-term roadworks and refurbishment works (eg in the Binnenhof area) going on in The Hague currently, so you may not see it at its best. Still very much worth a visit though.
If you wanted trips further afield, from Rotterdam my favourite was getting the Waterbus down to Dordrecht. Utrecht and Gouda can easily be done by train. From The Hague, Delft is a short tram ride away, while Leiden and Haarlem are doable by train.

PS Since you're going over Easter, a trip to the Keukenhof Gardens would be possible, though it'd be very busy. Don't know if you'll have a car with you; if not, you can get there by bus from Leiden station.

I'd just base in Rotterdam and take the train. Agree about visit to Keukenhof and if you have can Kinderdijk is worth a visit, you can also get the train to Utrecht for the day which is lovely

Enjoy! Getting Rotterdam Welcome Cards (online or from tourist information offices) may be of benefit as they give good discounts on most attractions and on public transport too. You also asked about food... I'm a supermarket gal myself :-) so can't speak from experience, but people tend to love the Markthal - large undercover food hall with a hugely colourful ceiling.
