Where on earth should we go?

Want to plan a lovely family holiday... finding it impossible!

Don't like beach/pool package hols.
Two teens. Two adults.
Willing to drive but not huge amounts in one stretch (health reasons)
Like to move around different locations but not a cruise!
Don't want to have to do massive amounts of organising, ie booking loads of different accommodation.
We like walking but are not likely to persuade kids to walk every day.
All enjoy scenery, wildlife, but also cities.
We don't like it too hot.
Have enjoyed highlands of Scotland in the past.
Is this the holy grail of holidays??
Budget is moderate but not huge.

Any ideas welcome!

We had a great time when we flew into Rome for 3 nights, travelled by train to Florence for 3 nights then Venice for 2 nights. Flew home from Venice.

However, we did this in October half term. just noticed that you would be doing it in July/August when it might be too hot.

We went to Zell am See, Austria last year- loads to do, the ski lifts are open and there are loads of summer activities at the top plus loads of walking trails, mountain biking etc. Fab outdoor pools with slides etc everywhere, plus paddleboarding on the lake. Scenery is stunning, flights to Salzburg or Innsbruck are not too expensive and accommodation is fairly cheap too - we stayed in a great Airbnb chalet in August, loads of availability too as its busier in Ski season.

This sounds fab! The idea of skiiing filled me with dread but I like the mountains!

I don't live too far from Zell am See. In the area there are cable cars, hiking trails, zip-wires and a "Go Ape" style climbing park (one of the largest in Europe). Mountain bike trails, and cycle routes in the valley for easier cycling (bikes and e-bikes available for rent). A tree-top walk. Rafting, lake swimming, a couple of outdoor pool complexes surrounded by mountains. And caves, an old silver mine. Salt mines. Paragliding. A veteran steam railway. A huge spa complex. Cake shops.

Salzburg has a castle, an Old Town, museums, the Red Bull hangar (F1 cars, planes) chocolate shops, "Sound of Music" tours and locations, cafes and more cake shops and much more ...

How about the Netherlands? You can get the ferry from Newcastle or Hull, take the car - you could do some of the cities, beaches, cycling and stay in different areas.
