Road Trip Ireland - any suggestions for things to do and see

We are on a camping/road trip in Southern Ireland for a week in August. Very flexible and hoping to see as much of the country as possible. It is just me and my partner - so no children to cater for this time!

Does anyone have any top tips, local knowledge or hidden gems that we should visit/see/experience? We love photography and walking and views and small villages and art and craft fairs and tradition and history.

My mum is from the Republic and refers to Northern Irish people as being from the north. If she needs to then distinguish that from someone from Ireland she'll sometimes refer to the south meaning anywhere in the Republic. I wonder if it's a generational thing. She's in her 70s.

Op I was going to suggest visiting Kinsale but it looks like you won't be that far south. Enjoy your trip 🇮🇪

You are going to be fitting a lot in in a week so I would break it down somewhat like this. Dublin is great, but realistically you could potentially do a weekend break there any time, so I wouldn't spend more than a day there. I'm obviously listening extra things, there's no way you would fit all these in in a day but just some suggestions....
Day 1: Starting point Rosslare, Wexford. Wexford: Irish National Heritage Park, Hook Lighthouse, Dunbrody Famine Ship, Curracloe Beach. Waterford: Cycle Waterford Greenway, The House Of Waterford Crystal, Tramore, Dungarvan, Dunmore East Cliff Walk. (could stay in Waterford, start day 2 there and do some extra things there if u wanted. Check out Irelands Ancient East for more suggestions.
Day 2, 3 and 4: Cork and Kerry. so much to do I couldn't possible list. Check out the Wild Atlantic Way website.
Day 5: County Clare. Cliffs of Moher, Doolin, Lahinch, The Burren, Ailiwee Caves. Check out the Wild Atlantic Way website.

Day 6: Explore Galway City. Travel from Galway - Athlone, stay in Athlone, see Sean's Bar oldest pub in Ireland, Castle, the River Shannon. Could check out Wild Atlantic Way website for Galway and Irelands Hidden Heartlands for more stuff to do in the Midlands.
Day 7: Dublin City. I loved the Guinness Storehouse. 😅

The Burren and Ailwee Caves are good.
What week are you there? Cruinniú na mBád in Kinvara is on 12th-14th this year.

Cork and Dingle...we will have 1 day in Cork and 1 day in Dingle...Does anyone have any suggestions of places to eat what is there to see, stopping of on the way to Dingle. We haven't got loads of time so any ideas of what is a must see and what we can miss would be great!
