Do any travel agents still let you "pay up" a holiday?

Haven't been abroad for years and years but really would love to get away next year before kids get too old. It will take some serious budgeting and saving! Many years ago I booked with a high street travel agency and after the deposit was paid, you could log in online and make payments as and when towards your holiday. Does anyone know if this is still a thing? I know I could just save up, but I'd rather it was put away towards the holidays and not available for me to dip into when something inevitably comes up over the year!

TUI let you do this. Can set up a DD or pay towards it as and when. I booked online.

You can pay up with easyJet holidays. Pay what you like when you like as long as it is fully paid by a month before the departure date.

To my knowledge they still let you do it but after our 2020 experience with covid I’d never do it again, getting the money back from virgin was a nightmare. I’d open a separate savings account that’s away from your regular banking and store it there and gain interest on it, even though the interest will be seriously rubbish.
