Kids and covid recovery passes - anyone who's done this and can share their experience?

Our income was really affected by the pandemic - DH works in events and it's been a rough 2 years. As a result we haven't been able to think about foreign travel until just recently and I'm now getting excited at the thought :)

We have 2 kids, little one just turned 1 in Jan and big one will turn 5 at the end of May.

DH and I are triple vaxxed. Baby should be fine. But taking an unvaxxed 5 year old to lots of the places we can afford looks like it will be very challenging, and rule out meals out, etc. There's unlikely to be enough time between his birthday and when we want to leave to get a vaccination sorted for him.

However, he and I both tested positive for Covid last week, on NHS PCR tests with subsequent email confirmation. For me, it looks straightforward to turn this into a certificate of recovery on my NHS app. But from what I can see there's no obvious way to get the same document for him.

I'm a bit dismayed that the NHS won't do this, but anyway... If I can budget to buy a recovery certificate from one of the private companies selling them online, is it going to be worth anything on the ground in Spain, the Canaries, or Greece? Will a restaurant or splash park accept it and let us in?

I'm just really keen to give the kids a lovely time and would be grateful for any advice from anyone who's dealt with this - or maybe someone who can make more sense of the rules than I can today! :)

I though most places didn't require vaccination or certificates for that age group. Under 12s are often exempt from those rules
