12+ holidays and insurance / do we have to go package?

Looking for May half term. Eldest DC will be 12 years old. So Max of one vaccine. We want sunshine. I am thinking better to book package as presumably Tui or whoever would have to refund if we aren’t allowed into Jamaica/USA/Mexico with only one vaccine? Was considering all inclusive in case law changes mean we are restricted to the hotel for quarantine. What are others doing? My big fear is we spend and then can’t enjoy holiday and are restricted to one room for quarantine. DH and I fully vaxxed, kids have had Covid and only eldest will be 12+ by then. Is there any insurance to buy? Thank you .

Personally I wouldn’t book anything yet until you know if you have to have a booster /3rd jab to travel as it’s been mentioned in the press .
I also wouldn’t go that far as it’s long way to get back if things fuck up😂 and I would normally visit Mexico twice a year
However I’ve just come back from the canaries with Jet 2 and can’t fault them there customer service was first class all the way through

But I wouldn’t trust Tui who I would normally book with to refund you quickly or be of any help

I'm in the same boat OP and unsure what to do about booking for next May/summer hols. Have one DC who will be 14, another who will turn 12 between May and summer hols, and then a younger DC. They've all just had covid (as have DH and I, double vaxxed), but I'm assuming that in six months time we may be vulnerable to reinfection again. I've got two concerns - the first is about not meeting entry requirements, and the second is that even if we can travel there still seems a not-that-unlikely chance of one of us asymptomatically testing positive on a pre-flight PCR.

I'm desperate for a proper holiday but really nervous about being caught out. We've never done a package holiday before but I agree that they are probably the lowest-risk option.

It’s so frustrating isn’t it. We are really lucky that we and the kids have travelled tonnes previously and coped with weird visa restrictions/ government approved escorts etc.. But I just want to go somewhere that isn’t the U.K.. it feels so weird that we just want to go on a very basic package and could pay and arrange it all and just not be allowed.
I want a really clued in travel agent to tell me what to do, but imagine they are all flying blind too atm tbf.
