What's the risk of green going red?

I'm in the process of planning a holiday for next year; probably just a week somewhere away in Europe and I will go for a package deal as it seems lower risk. As there are now no amber countries I don't understand how how you can be sure that the green country you're going to won't turn red while you're away? I'm lucky enough to be able to work from home so I knew I could quarantine if a country went amber, but wouldn't be able to to pay for a hotel stay if it went red. I'm sure this is the case for most people looking to go on a week's summer holiday abroad. I feel like I'm missing something in the new system?

I came on to ask this exact question so following in case anyone knows!

It seems so risky that anything could go red without the prior warning system.

@Insertfunnyname so he answered the question but I didn't like the answer. He basically said that the red list is far too long and therefore this no chance of anything else being added to it. Whilst I appreciate that might be the case now I'm really more concerned about next summer. When the red list might be much shorter.

I don't think anyone knows, things are changing so quickly I don't think anyone can predict with any degree of accuracy what foreign travel rules will look like in 6 or 9 months.
