Big Anniversary holiday

We wanted to do something special last year as it was in between our 60ths and our ruby wedding but first DS set his wedding date and Covid so we thought this year. So now we are thinking next year for a biggie holiday. But we can't decide on where.
We aren't into lazing. DH thinks good food is the most important thing and I want to be active. DH loves photographing birds, I love snorkelling, hiking and sightseeing. We aren't keen on big resort type hotels and definitely not AI, we like exploring local restaurants.
Any suggestions?

I'd save the money on the long haul flights and go to Madeira, stay somewhere really gorgeous. There is wonderful birdwatching, fabulous walking and the food is fantastic.

I've been to Pulau Redang in Malaysia and stayed in a very nice nice but small and not AI resort. Definitely had bed sheets! The diving and snorkelling was incredible. There is amazing scenery on mainland Malaysia for walking etc, and the food is fabulous.
Costa Rica is also amazing. Not a foodie destination but everything else there makes up for that.
If your budget stretches to the Galapagos, then absolutely go for it. It's the most magical place in the world. Spend some time exploring mainland Ecuador, too. There are lots of beautiful places very accessible from Quito so two weeks shouldn't be too much of a stretch.
