Recommendations for SH Solo Trip

Hi, I have Easter week off, unfortunately my DH doesn't. I usually rent a little cottage in the Cotswolds, read books and catch up on TV on such occasions. However its proving mega pricey this year so I'm thinking it might be worth spending the same amount and getting on a plane and going somewhere new. Any recommendations for somewhere to fly (within 2 hours-ish) to for a novice solo traveller abroad. I'm fairly easy as long as there is good food and a few things for me to do during the day if I feel like it. Sun/sea is not essential. I just want a chilled out break.

I have been to S’Algar in Minorca a couple of times alone . AI but good food .
Lovely walking and too many ancient sites to mention .
Last time I stayed at Port Bleu . Adults only . Good pool and pool bar .

If it was me I’d get an apartment through Air BnB and go to Rome or Verona. Both are fabulous cities to wander or chill out in with a book and glass of wine. AI wouldn’t appeal to me at all (and honestly, that’s personal and apologies to the PP above, I can see why it would appeal to others) as I think I’d feel more noticeably on my own in an environment in which a lot of the guests will spend the majority of their time.

I went to Paris and did a language course by myself last September. It was lovely, I wandered a lot, saw a lot of museums, went to a market as part of a tour and ate lots of nice food.

Easy trip by Eurostar too.

Thanks for the suggestions. You have given me something to consider regarding AI. I'm quite happy to visit restaurants solo and cook a little myself so I'm leaning towards an air b and b type set up now. Besides i think if I have the option of eating in I might chicken out of venturing out and really making the most of my time away. I'm not the most well travelled so I admit I'll be a little nervous.
