Easter holiday by car?

I'm going round and round in circles trying to find some inspiration of where to go for a week in the Easter holidays.

We'd like to drive as DD isn't great with flying, so that means Northern Europe. I prefer France as I speak French and it adds to the holiday if I can communicate in the local language.

We're not guaranteed to be able to go exploring or have big days out as DD has ME so we have to take each day as it comes. This means where we're staying is important as we might be stuck there for a week. But equally, places to visit are needed just in case we can go out for a couple of hours.

DD said she'd like to go to Center Parcs as she can watch the nature outside through the big windows, if she's not well enough to go out. But it's so expensive and we might not use the facilities which usually makes it better value.

Also we've found it easier to be in a town as it gives us a bit of freedom to pop out for a coffee/wander and leave DC behind, if DD isn't well enough to do anything. And self catering.

Any ideas, recommendations please? I realise it's a very open brief, but I really need to narrow it down. Thanks.

La Domaine du Val in Normandy is a idyllic. It's a selection of varying sized cabins, indoor swimming pool, playground, indoor play area, football ground, trampoline, table tennis, bar serving food (with children's area) and gym. What makes it special are the original features, such as the vegetable patch (free produce handed out to guests twice a week), beehive, onsite animals, discovery trail, wicker tepees with picnic tables... It's not in a town, but there's more than enough to do nearby. We went pony trekking on the beach, seal safari and rode the nearby steam train though the nature reserve.
Normandy Garden Village is our other favourite easy-access location.
