Disney parks but not staying on site

So we've an option to self cater in Florida this October and I'd love to get spend some days in the parks in but don't want to do it every day.

If you aren't staying in a Disney hotel can you buy day tickets or do you have to still buy a 7 day pass? I can't find a day pass anywhere online. Also how much difference is it if you don't have those extra hours in the park due to not staying on site?

I've never stayed on site, and never buy the UK tickets. You need to try to get the Disney site to stop defaulting to the UK site so you can access the US tickets. Or try Undercover Tourist (or similar)?

We never go to any of the parks for very long, never stay on site. For Disney usually buy a 3 day pass in the US.

Personally, Disney isn't THAT important to me, I don't need to go on every ride possible, so don't feel the need for any extra hours. We usually go at rope drop and head straight to the rides we want, plus make full use of Fast Passes. The only ride that was really tricky was in Pandora in Animal Kingdom - last year we arrived ?30 mins before rope drop, and still had to queue for about 2 hours to get on Flight of Passage (it was an amazing ride though).

However, I grew up in Florida, and we go back as a family most years, sometimes staying for some time in Orlando, sometimes not, so I never feel I HAVE to make the most of my visit IYSWIM? We always know there will be another time.

I've never contemplated staying on site for Disney, I much prefer a villa (or hotel if not staying long).

It’s expensive to buy day tickets, so it’s probably as cheap to buy a 7 day pass. That would also allow you to do shorter days, say a morning in a park, and then back to your villa or shopping for the afternoon.
