Can you still enjoy Disneyland if you book it last minute?

Something has come up which means we may end up at Disneyland Florida for a few days over the Easter holidays. I've been looking into how many days we'd want to go for, what parks to do etc and have seen lots of things about booking restaurants and fast passes months in advance.
We won't know for certain for at least two weeks if we'd be going so wouldn't be able to book anything until about three weeks before we arrive... if there is still any availability at all.
Is it worth doing it? DC are 9 & 6. Whilst the flights are "free" (as we'd be out there anyway), accommodation, park tickets, food etc will obviously cost.

You'll find restaurants when you're over there - I booked everything at 180 days out and then made loads of amendments whilst there and there was availability to do so. The only ones you'll struggle for are Cinderella's Castle, Be Our Guest etc.

Fast passes are definitely good and again, you'll be able to get some whenever you book but the 'big' rides will have gone at 60 days before when the onsite guests are allowed to book them.

I’ve never booked restaurants before going as where and when we eat really depends on the day, kids moods, tiredness levels, heat, waking up times (early at the start of holiday due to jetlag) and so on. Never had trouble but we really eat to fuel us rather than for an ‘experience’.

Fast passes are ace and we always book them as soon were allowed (not staying on site) and have moved them round lots after this and always got what we wanted. The popular rides probably will have fast passes available at less popular times such as 5pm onwards. There are ways to get on the rides you don’t get fast passes for too, super early or super late.

It will be great, even without booking it all ahead of time.

I think you’ll probably enjoy it more by not stressing months in advance about what rides and restaurants you’ll be going on! It saps tge fun! We didn’t go to any sit down restaurants, just the self service ones which you don’t pre book and had a great time. Saved loads of money on tips too!

You will enjoy it but probably won’t be able to book the fast passes for the big rides as they will be gone-ditto for dinner with Cinderella etc
How old are your children as you may need to queue for longer periods?
