I also flew from Gatwick last week and there was a normal check in option with hardly any queue for those who didn't want to print their own boarding pass etc.
The on board snacks on sale are typical lo-cost options. Didn't see anything fishy. (Long haul may be different)
They made an announcement on the inbound flight that nobody was to open any product containing nuts. That wasn't said on the outbound one so guess their instructions changed after last week.
Compared to the Thomas Cook check ins opposite Norwegian, Norwegian seemed like 1st class emirates!
One small thing- inbound the flight was showing "delayed" This went on for ages then suddenly changed to "last call" and there was no delay at all. Luckily I was about to buy coffee and stock up on snacks at the bar and dd was at the gate and spotted it.

I don't mean check in, I mean the actual labels you put on your suitcases before they vanish down the conveyor belt. Check in was all self service round the corner from what I could see.

Maybe it was some unforeseen staff shortage day, as there were 0 staff behind the desks, only the few wrangling a couple of conveyor belts each on the passenger side of the counters. There weren't any known issues or delays on the boards as far as I recall.

Flew with them last month, to and from Bergen. The return flight was delayed 15 minutes or so taking off, but we got back to Gatwick on time.
One of the better budget airlines, IMO.

I've flown with them and found them fine. The onboard wifi has only worked once out of four flights, but you haven't paid extra for it so can't really grouse.

You can see their onboard food offerings online. I had a tapas snacky thing which I think was around 7 euros and comprised parma ham, cheese and some olives and was quite nice.

Not had a problem with them and they're cheaper generally than the alternatives for where I want to go, so I'd use them.

Norwegian Air are excellent. Lovely planes, great value. If you book through Expedia you should be able to get a ticket at the same price as booking directly but with meal included and I think slightly better luggage allowance.

I've flown back to Manchester from Oslo with then on several occasions.
No problems or issues.
