Yes go!
There's loads to do that don't include rides:

  • Miniland
  • Loki's Labrynth
  • Castaway Camp. Castaway Camp is a large climbing/play centre in Pirate Shores that can get extremely busy and is best for 6yrs+. It is very easy to lose sight of your children (especially the younger ones) on the equipment and height may be an issue at times for some. Try to give your child a rough idea of how long they should disappear for!
  • Enchanted Forest
  • Harbour live shows
  • Pirate goldwash
  • Drench Towers
  • Splash Safari
  • Duplo Valley theatre
  • Lego Reef
  • Fire academy
  • Imagination factory

Then there are some rides where adults don't go on. E.g Driving School

There are others where there are more than two seats per row/ride:
Jolly Rocker
Viking river splash
Ninjago The Ride
Atlantis submarine
Pirate falls treasure quest
Spinning spider
Coastguard HQ
Balloon School
Fairytale Brook
Desert chasers carousel
Scarab bouncer
Skyrider

Children over 1.3m can ride Raft Racers and some others on their own.

If you manage to do any more than this in a day, I'll be impressed!

At 6 and 8 they can sit together. You sit on the row behind.

We did a theme park with three under 5, (5 of us in total) and that was tricky but doable. On some rides one adult had to go on 3 times whilst the other adult looked after the other 2. Luckily it was quiet and the operators let me remain and swap the children!

I wouldn’t think twice about taking a 6 and 8 yo.
