What are your fave self catering meals when you are on holiday abroad? Looking for some inspiration for me and DP

I take some of Anjum Anand's curry kits - you can buy them in waitrose and Sainsbury's. Just add meat or vegetables and cook some rice and you've got a lovely meal.
Easy, quick and super tasty.

It depends on the weather. If it's too warm we don't want a hot meal. Instead I go for easy-to-prepare already-flavoured packet couscous and add some crumbled feta cheese or chunks of cold meats, served with salad.
If we're staying somewhere coastal, I like to try and buy fresh fish or seafood from a local market. I remember I once managed to get some gorgeous crab which I did in a light lemon and chilli sauce with salad. Scotland had some amazing smoked trout too!
If I can't get local fish, I look out for local cheeses to put in a salad or omelette. My DH did a beautiful baked Brie in France.

If in France we go to the hypermarché and get wine, cheeses, bread, dried sausage, jarred paté and tins of cassoulet, confit duck and choucroute garnie.

I like to look in the supermarket freezer section for things like seasoned cubed potatoes to fry up with omelettes and salad.

Anything involving crusty bread and cold meats and cheese.

Steak and salad

Fajitas (take a couple of kits from home then make fresh guac)

fajitas kits, pasta and cheese and bread, anything with a jar or simple sauce and rice, pizza.

In Spain I like the ready made tortilla omelette with ham, tomatoes, olives and bread.

Also make gambas a pil pil to eat with crusty bread as it's very quick and easy to make - you just need some king prawns, olive oil, garlic and smoked paprika, maybe some chili. Just fry the prawns and garlic in oil and add some paprika, takes about 5 minutes to make. I generally take the paprika and garlic home with me so don't worry about buying stufff and not using much of it.

Barbecue with ready made salad and bread. Pizza from supermarket.

Or just eat out.

Some lovely ideas thank you. Want to try some new easy meals even though we won't be eating out much because DC is a nightmare in restaurants.
