Luxury holiday end of May... all suggestions welcome

Looking for a week away at the end of May. Myself, DH and our 15 month toddler. Happy to spend around 3-4k.
Must haves:
Nice relaxing hotel. Don't want it to be too busy if we decide to stay around the pool.
Would like to experience the local cuisine (needs to be veggie friendly)
Preferably near a beach
We like a walk, so very happy to go for a trek.

Went to crete last year on the East and North coast, absolutely loved it. Lake Garda and Tenerife have been mentioned. Very open on location.

The end of May is school half term week. So if at all possible avoid avoid AVOID! Not only will it be heavily booked up already (people with school age children will book a year in advance) it is going to be roughly double or triple the price of the week before /week after. Are you tied to this week?

We stayed in Rovinj (Croatia) a few years ago at October HT (weather was good then). There are three hotels close to each other - two of which are 5*. We stayed in the Lone - which was the designer hotel but there is also a traditional hotel next door...I think the location and hotel would tick a lot of your boxes.
The location is amazing (quiet and fairly unspoilt) and you can walk around to the town, the hotel was just fabulous staff were of the attitude - anything is possible ...one of just few hotels I would be in a rush to go back too...

Definitely on the list. Went to Croatia s few years ago (Dubrovnik and Hvar).

Did you venture further out of Rovinj during the week? Or is there enough to keep you busy.

We did venture out because there was allot of places we wanted to see in the area but only for a few day's...we went to Groznjan (which was a lovely hill top arty village) and stopped at Porec on route ...then another day to Rabac and Labin (Rabac was again really lovely and a place I would stay but it would be more of a beach holiday).
You can hire bikes - the hotel offered a free bike hire for one day and they have a massive selection which include toddler seats.

I think its possible to catch a catamaran to Venice too from Rovinj but they were not running in October...although we did do a boat trip from the harbour.

The Hotel Lone has a wonderful spa with heated water beds :-)

Been reading up about Lake Garda... looks stunning.
Any opinions on Garda, Bardolini or Malcesine? And would we need a hire car to get around?

Not concerned about Malcesine being hilly, we carry the little on in a baby carrier!

Lake Garda is lovely - we stayed in Peschiera del Garda which we found was a great base because we had teenagers who wanted to visit all the theme parks. Sirmione is beautiful and worth visiting....the only negative aspect of the lakes is rain...we were there in August and it rained 4 out of 7 days which would put me off returning....although we did the Aosta valley in July and visited Lake Maggiore and the weather was wonderful for the whole period (although plagued with Mosquitos )

Rapallo in Italy is another lovely place to visit (stay)where you don't need a car and can use trains to do Cinque Terre/Portofino etc ...there are quite a lot of upmarket hotels but we stayed here which was really nice : Europa Hotel Design Spa 1877 (You can walk from village to village (or some of them) along the Cinque Terre).

Other place to consider maybe Montenegro...I have only done a day tour so cannot really comment.

The other consideration would be South of France/Provence - although I think you need a car to really appreciate the area.

Sani resort in Greece! We've been there three times in May (may half term holiday). It's luxurious, really well run and has beautiful private beaches.

The first time we went, DS2 was 14 months, they have everything geared towards families with babies and small children, really took a stress out of travelling with small toddler.
