Activity holiday, one parent. Any ideas?

My children want to go away and do things like learning to sail dinghys/lasers, canoeing/kayaking, snorkeling etc, the sort of thing mark Warner and neilson do.
However, DH has been ill long-term, and I do not think we would get any insurance for him to travel to any of these places, if he's even well enough to travel, or free from hospital appointments.
Are there places that are decent value for one adult/2 children?
Neilson are fully booked in any case for the dates we can go (beginning of august).
Or, alternatively, are there places in the UK that are warm enough to do these things, where he wouldn't need specialist insurance to travel (he wouldn't be doing any activities!)?
All suggestions welcome, our budget is reasonably strong, but not limitless (so forte village in Sardinia not possible- £10k for 7 days aug last time I checked!)
Do club med have decent instruction in English? My children's French is too basic for learning to sail/surf I fear.

Sorry- should have said- they're 11 and 8, 8yo isn't a fantastic swimmer, but I am assuming that any sailing/canoeing is done wearing a buoyancy aid?

Have you considered a PGL type holiday? I know they are usually seen as school holiday type centres but they also take individuals for holidays too

Perhaps you could stay in the UK and with the saved money from less travel, you could spend more on activities which sound like the main attraction for the kids :)
How about somewhere in or near Cornwall?

There are also good watersports options in Devon, not quite as exotic as Sardinia I know Wink

I think weatherwise the European ones may be a better bet.

Eurocamp have sites where there are lots of activities and you would pay a single price for accommodation rather than per person. If there's no availability through eurocamp you might get lucky booking direct with the site. We go to la garangeoire but I'm not sure if the activities they off would suit your children. Would be worth a look though.
