Going back or somewhere new?

Over the past few years we have repeated our summer holidays, pretty much alternating a castle in Tuscany with Florida. We are really torn about next year. We know we love our Previous holidays and would live them again, but there is so much in the world to see!

We do have some complicating factors. We foster, so when we plan our holidays we generally have no idea how many children if what ages will be with us - we have planned holidays with 2 teens and ended up taking 5 children from 0-18 several times. So we have to book flexible accommodation, usually self catering, with the option if lots of good cheapish restaurants so I am not catering! ( this us why Italy and Florida work!)

We have a good budget, and I spend a lot of time researching, but we are limited to Summer Holidays. We budget £7k for the basic 2 adults and 2 children and an extra £1.5k per additional child.

I'm really interested in ideas for other holidays we might enjoy, or whether others in our situation would just repeat the holidays they love!

Ideas we have for other hols:
American road trip
Japan
Cruise ( my dh is a but nervous about norovirus)

Or anything else! I wouldn't want to do 2 weeks in a city as I find it knackering.

Cruises are brilliant. We have been on 4 and have one booked for Feb 2015 around the Bahamas and Key west.
Our DC love them- kids clubs, lovely food, lots of shows, cinema, pools and Jacuzzis.
We find cruises relaxing and enjoy seeing new places each day.

Just come back from Canada - Vancouver, coast, rockies. absolutely fab time. can thoroughly recommend it. weather similar to Uk (bit warmer) and easy to drive around. message me if you want more details. have 3 teenagers. getting 2 Canadian dollars to the pound makes it very good value and food out is dead easy. my kids preferred it to florida.

I can't see how a cruise could work if you don't know exactly how many people would be going. You could end up in multiple cabins all over the ship if you have to book some passengers later on. They are great though and you can often get good deals if you book late when you know how many DC are going.
I never go back to the same place twice but I can see why it has worked for you in the past.

How about hiring a big house somewhere?
Summer holidays in the mountains are good for kids of all ages, maybe somewhere like Morzine.
Or Barbados if you want something a bit less active/more beachy and good value local restaurants.
Japan is great but quite expensive. You might struggle even with your very healthy budget.
