Some do. If you get the Apple Pencil and the scribble app you can write notes on the screen and it will automatically convert them to typed text. It takes a bit for the software to learn your handwriting, but works really well.

Enter text with Scribble on iPad

On iPad, use Apple Pencil and Scribble to convert handwriting into text.

DD uses her iPad Pro for everything. She has an Apple Pencil for lectures and writes all her essays on it as well.

Both dds use I pad with the pen. Just make sure you back everything up

I used an apple pencil and OneNote for my MEd. The best thing is that you can take pictures from inside OneNote of either paper or screens which go directly into your notebook for you to annotate. Total game changer for handouts and lecture screens.

Also in OneNote you can change the paper colour and choose lines or graph paper which makes handwriting on the screen much easier.

I'm not a student but use Goodnotes together with my Apple Pencil for written notes (I often have to jot things down quickly in work meetings etc and find it easier to handwrite this kind of thing), and the Apple notes app for typed notes. I've found it really convenient to have all my notes in one place on the iPad so I'm not constantly hunting for info and wondering where I put it. (I have ADHD so this is especially helpful for me! lol)

Yes, DD does for a biosciences degree. I think she then amends them, sorts them on her laptop in, I assume, Word. But she's shown me fantastic expansive mindmaps that she's been able to create on her ipad and she rates it highly.
