Start with the halls of res and the university based lettings listings - the older halls are cheaper generally. Loads of well priced house share arrangements on good transport links to the uni too. Private halls can work for some but are actually a bit shabby in many cases and expensive to boot.

Depending on how far you are from Manchester could he commute for the first couple of weeks or stay in an Airbnb/travelodge as rooms in the halls of res often come up in the first term as people rapidly drop out (not ideal for freshers I know).

Unless they've changed the policy from last year, they'll guarantee accommodation and you choose a few. I have no idea how then they allocate as the whole thing seems
very random but you might get one of the choices! Fallowfield is the biggest batch of uni accommodation (but some is new and some is definitely not!

Mine was caught up in the accommodation problems last year but did eventually get something before term started.

My son's friend applied to a music college in Manchester late and he is struggling to find accommodation as most private halls are sold out.

Fallowfield is not the worst choice - good transport links, decent shopping and near lot of halls bars and the sports grounds. You can also walk to uni in 35-40 mins from there if you want to save and there are lovely places in Withington and Chorlton a bus ride away. It’s about 15 mins to a train station to go walking in the peaks as well depending on your DS preferences. 15-20 mins on bus to uni and aquatics centre, 30ish to city centre and main stations. 30 the other way to the airport.
I hope DS gets something soon and loves Manchester - it’s a great place to live and be a student (and, more importantly, although DS might not realise this yet, a great university)
