Potty Training 3 year old with IBS

Help! My little boy is 3 and has IBS - diagnosed by a paediatric gastroenterologist about a year ago, after tests for coeliac disease, various parasites, food diaries etc. He said that there was little to be done, not to change his diet, and to delay potty training until the child asked for it himself. I've seen homeopath (who's worked wonders with my heavy periods and older son's hayfever) who is helping us to control it, and we have fewer episodes, and they are shorter than before. However, now we are potty training - and ds is really keen, weeing in the potty, sometimes pooing, and very happy about that. However, yesterday we had a couple of poo accidents, and today, we had a shocker - you know, the type that involves both of you needing a shower afterwards. He's had another since - again, very runny, messy, diahorreah like, and very upsetting for him. He said he had a pain, too. Now I know IBS is often triggered by stress - and although I've tried to make potty training really positive and happy, I think he's old enough to understand when he doesn't "make it", and he gets really upset about the messy poos. I've looked up IBS on the internet, and apart from lots of sites saying it can cause delays or difficulties in potty training there's nothing saying what to do about it. Some advise change in diet for kids with IBS - but I've found several that were directly contradictory! I'm trying not to get stressed here, as obviously he'll pick up on that, but I feel I'm failing him because I can't find out what to do. A friend recently told me of another boy with IBS who is 7 and wearing nappies to school - I'm panicking now.
Has anyone else out there been through this, or know anywhere I might get some help or advice. I feel the paediatrician's attitude was pretty much "Good luck with that", but then, maybe there was nothing he could do.
