Hi, you'd probably get more ideas from putting this in the weightloss section. But:

Are you doing atkins or your own (less restrictive version). I am doing the later and reguarly make up my own recipes.

One of my favourites at the moment is, chicken strips stir fried with spring onions, mushrooms, spinach, garlic. Add some greek yogurt or other low fat plain yogurt. Some light soft cheese. And a little bit of lemon juice. You could add any veg you like to this of course.

Also I've made up some nice soups.

Last night I made a roasted vegetable medley, out of celeriac, peppers, red onions, some turkey strips. Fresh parsley, spinach. Drizzled with a dressing made from extra virgin olivie oil, lemon juice, dijon mustard. And then sprinkled with grated cheese. Was very nice.

Of course depending on what diet your doing these might not be suitable for you.

Should add that I've been doing this diet since jan 11th and have lost over a stone. So it must be working.

Hey pinkdolly - I see you enjoyed your tea last night! We had a Spanish Chicken Tonight casserole with cannelini beans, baby corn, asparagus & baby courgettes
Tonight we're having beef bourginon (cook in sauce). Only reason we're having to use them is because my oven's on the kablooey but they're very nice.
Having it with butternut squash & sweet potato mash, fine green beans. Yum

Probably should be on other thread but as my weight is affecting my health I wanted to post here - sorry.

You recipes sound yummy. I am doing it myself low carb with3 kids to think of and on a budget.

Isnt sweet potato really high in carbs?

Yes, I decided to go for it. Picked the potatoes out and gave them to the girls. It was really nice, I admit to having seconds. Not bad seen as this was a first attempt.

Your chicken casserole sounds lovely too, might have to give that one a go.

It's not a "starchy" carb though like bread, potatoes, rice, pasta etc and so (for some reason) counts as a 'good' carb. So I'm told.
I;ve been doing a 'no starchy carbs after 5pm' diet and have lost half a stone in 4 weeks

Actually the "Chicken/Beef/Sausage Tonight" cook in sauces are a bit of a godsend.
You could do it just as well with a tin of tomatoes & some chopped peppers as well though I reckon

Like you I have 3 kids and am on a budget, but it all seems to be going quite well. And I have to say I eat a much wider variety of food now i'm on my diet. I was terrible before. It needn't be restrictive.

But I adore my chicken and could quite happily eat it every day for dinner. Sad aren't I?

no pinkdolly - I dont think you were nagging at all...far from it.

Im doing chicken chausseur tonight and had yet another bowl of salag earlier.

Its only been a couple of days and already i have more energy and feel fuller for longer (I was always hungry when i was snacking on biscuits all day long!)

now - can anyone tell me the deal with celeriac? how do you prepare it or cook it?

I think this diet should really suit me as I love veg and lean meat, but I have relied on pasta and potatoes for SoooooooLonngggggg that its hard to break the habit.

Iklboo - half a stone in 4 weeks?! Thats fab!

Cauliflower cheese (made with cream rather than flour-based) is nice with just about anything.Stir fries - heansprouts are very low.

I par-boiled my celeriac for 10 mins (ish) and then roasted it among the other veggies.

It was the first time i've ever tried it but my mum wals talking about poaching it in milk and mashing it (like potato), think se's been watching too much Jamie Oliver. Anyway I googled for recipes and quite a few came up.

I'm glad youre feeling better already on your new diet. Before my diet I would crave snacks all day and would always be picking. Since I lowered my carb intake I dont need to. And dont even feel deprived.

I do allow myself naughty little treats every now and again tho.

Squash is good too. Simply chopped into chunks and roasted in olive oil with garlic. Don't peel it.

Low carb is a fantastic way to lose weight short term. I find that I simply lose my appetite completely. And the weight drops off. But when I tried to follow it long-term (best part of 2 years) I started to get fed up. Now I use it as an emergency weight loss plan for 3/4 weeks.

make big salads with low GI non wheat grains and high protein pulses
ie:

  • quinoa
  • brown rice
  • amaranth
  • green lentils
  • black beans
  • chickpeas

mix in lots of fresh low carb veggies and herbs (tomato/cucumber/peppers/onions/broccoli/aspargus/courgette/and all greens + coriander/dill/basil/chives/ etc...)

drizzzle olive oil/lemon juice/soy sauce/chili flakes/etc...

Ad whatever protein you like (don't forget oily fish)
