I am trying to sort out my eating as I have been living off junk for dinners since covid hit really. I am pretty healthy during the day - greek yogurt and fruit for breakfast, lentil / vegetable soup and fruit for lunch, snack on nuts etc. But I just can’t make myself eat a healthy dinner. I am thinking of having a grazing board type thing - cheese, tomatoes, cucumber, olives, bread - instead of a cooked dinner. Do you think this would be healthy enough? I am vegetarian so wouldn’t be having meat.

I'd be looking at what is stopping you having a healthy evening meal? Is it lack of time after work to cook, not having ingredients, too tired? Have you tried meal planning, or at a minimum, planning the following days meals? Batch cooking? Use a slow cooking, throw it all in the morning and its ready when you get home. There are some great veggie curries/stews etc. A grazing tray might ok for 1 day- but not an entire week!

I love shakshuka. You could batch cook the tomatoe base on a weekend, then you just need to heat it and cook the eggs for dinner.

Microwave baking potatoes before work, finish in the oven at night and add toppings of choice
