I’m a full time working single mother to a toddler! I work from home most of the week and my diet is shameful (crisps, toast, a bit of cheese, more crisps, an apple, a bacon sandwich from the bakers)!

If I have healthy food in I try and snack on that but if I don’t I just eat ALL the crap. Whilst some will berate me and say make time to cook, I genuinely don’t have the time! I used to get Hello Fresh, which was great but work is so full on at the moment I find myself also working in the evenings.

So… I was wondering if you wonderful ladies (and gents) could share your favourite healthy (and quick and easy) snacks, lunches, dinners and breakfasts! I’m turning 40 in September and want to feel bursting with life, not sluggish because of my carb and cheese diet.

I boil half a dozen eggs, and keep them in the fridge for easy lunch options. I also roast a load of veg - courgette, pepper, tomatoes, butternut, red onion and again keep in the fridge for lunch. Dried dried is good for snacking, also oatcakes. Nairn do oat biscuits which are low in sugar and give a boost of energy when needed.

Thanks some great ideas! Just ate a whole tub of olives... slightly better than cheese but not sure that much!

I also boil a load of eggs and have 2 x per day for lunch with some hummous and celery sticks. Cheap, quick, super easy and healthy too x

On days I feel a little more hungry I have bought in a stash of frozen mixed rice and veg steam bags. Pop in the microwave for 4 mins and I mix with tuna or mackerel or eggs and that's a nice lunch too x

Fantastic suggestions! I will be doing a big egg boil this weekend haha! I also thought back to when I was actually healthy and these were some of my fridge go to, if it helps anyone
Cooked prawns
Cooked chicken breasts
Olives (but maybe not a whole packed at a time) )
Cheese oat cakes
The low fat baby bels
Cucumber/celery sticks

I do Greek wraps for lunch - flatbread, tzatziki, lettuce, cucumber, red onion, cherry tomatoes and 1/4 of a halloumi block.

Do not buy the food you don’t want to eat.
Ive started eating full fat Greek yogurt ( keeps you full longer) with blueberries for a pudding, definitely works.

Fage 5% Greek yoghurt with berries and a splodge of honey

Avocado on toast.

Scrambled egg (can be done in microwave if pushed for time, but hob tastes nicer) with some spinach and a small handful of cheese thrown in.

Pre-cooked chicken in a wrap with houmous and leaves.

Chicken/Prawns/Beef/Portabella mushrooms and peppers and onions marinated in fajita mix for 5 mins then stir fried and served in a wrap. Add some grated cheese and shop-bought salsa and guacamole - takes 5/10 mins but always feels like
a proper dinner.

Salads - buy protein items cooked and fresh so they’re ready, much more likely to use the while you’re short on time.

Large batch of meat or veg chilli, freeze into portions then can be used for chilli, wraps, to top a jacket, to make nachos, tacos

Ladies! I've stocked up and ready to go! @KateLumley @Cudz I'm ready to become an egg boiling queen! Couple of questions, what's optimum time to leave your egg boiling for a hard boil? And how many do you boil at a time? Can I boil five and have one a day, or won't they last that long xxx

I boil large eggs for 9 mins, I like the yolk to be set but still have a creamy texture. I think they'll be fine as long as you cook them down rapidly - I use an ice bath. I peel the eggs and keep them in a bowl with clip on lid.

Most often oatcakes abs cheese plus apples for lunch.

for dinner I love stuff from the green roasting tin especially some combo of roasted veg, tahini sauce with lemon plus feta or halloumi.
