Food hygiene help!

Cooked a spag bol yesterday. Events occurred late afternoon and I forgot to refrigerate it/separate it into portions to freeze (batch cook! So much food!). I think, if it's always heated properly, it will be fine. Other half says throw it away! What do you think? Thanks.

I'd eat it. But I'm fairly lackadaisical about food hygiene - no-one has got ill or died in my house though.

How warm is it in the kitchen in your house overnight?

dementedpixie · 30/08/2021 10:11

Cook it to lava hot

Covgal83 · 30/08/2021 10:17

Cheers! I'm with you both. I've portioned up a sizeable meal for OH and me: we'll have that before we feed the kids any!! Thanks.

That could definitely cause you food poisoning (which can take several days to incubate). It's not even just been left overnight, it's been left since lunchtime yesterday? Some types of food poisoning such as 'bacillus cereus' are heat resistant so even if you boil it to oblivion you could still fall ill.

Honestly for the sake of a meal I would rather not explode out of both ends.

If I'm unsure I reheat in the oven in a covered dish. An hour of heat will do it.

I'd make the pasta again fresh* through, mostly because I don't like overcooked pasta.

  • Not fresh fresh. I ain't Nigella. More of a packet woman.

The maximum time you should leave cooked meat out at room temperature is 2 hrs (or one hour if room temp or weather very got) because harmful bacteria can potentially double within 20-30 mins outside of the fridge.

Anothermountain · 31/08/2021 15:53

hot not got

PricklesTheHedgehog · 31/08/2021 15:55

You won't enjoy eating it thinking you might become ill.

Throw it away!

Backtobacktheyfacedeachother · 31/08/2021 15:56

I wouldn’t risk that

loopylindi · 31/08/2021 15:59

You could recook it (in a pressure cooker for example) but the texture of the meat will toughen and it will not be pleasant to eat

MummyJ12 · 31/08/2021 16:24

Completely agree with @emilylily the problem is with the spore forming and toxin forming bacteria such as Bacillus Cereus and E.Coli. If you are going to reheat, make sure it’s nuclear and eat straight away. But I wouldn’t risk it.

Not happening on my watch. I don't do food poisoning since I had a bout that lasted a month and I'm now on biologics, which makes it even more dangerous.
