Soya sauce - has anyone else read that it's not super healthy and is made using a fairly chemical process?

I read that Tamari sauce is better as it is aged slowly.
Does anyone agree about the health issues with Soya sauce?

I use Kikkoman soy sauce - it's naturally brewed, and they do a low salt version, too.

Haha ok, no I didn't know that. We only use it sparingly in stir fries etc anyway but I will definitely read the information.

I always thought that Kikkoman was one of the better ones too.
It's so high in salt, but I love it.

What I read implied, I'm not a scientist though, that the speeded up nature of mass production makes a product which has some fairly unpleasant ingredients created by the process.

The healthier version should be aged properly apparently. Tamari sauce, I believe, takes 18 months to age and get that flavour naturally.
