Post yout recipes bulging with fruity and veggie goodness here...

Shall I start with my yummy easy-peasy spinach and potato soup?

Bag full of spinach (or perpetual beet)
knob butter or similar
1 small potato
1 medium onion
Ground black pepper
1/2 pint veg stock or bouillon

Soften onion and potato in butter, add chopped spinach. Add stock, lots of pepper, simmer 20 mins or until pots and oinion is soft. Blend to beautiful velvety green, add whirl of cream/creme fraiche if wanted. Mop up with lovely grainy bread. feel those minerals surging....!

I know, I'm ve-ry sor-ry [remorseful emoticon] it was the 'exactly how many blackberries' post what prompted me into goading you.....and the fact that my husband goes into quivering meltdown if confronted with the idea of cooking something without exact, specific details. ''well, exactly how much is a knob of butter FFS...'' etc etc.

If I may refer the Right Honourable Member to my original question..."...but roughly, how much berries?" from week 3 thread, you will note the difference between 'roughly' and 'exactly'...quite a wide margin of difference, if I may say ma'am...but who am I to unsettle someone elses stereo-typical thinking.....

A "Substitute Veg. for the meat" one;

Spaghetti Carbonara, except no bacon
( or ham ) but instead fry sliced courgette, leeks, and mushrooms. Add this to the cooked pasta pan, mix in, and pour the egg/cream/parmesan sauce over that.

Paps Quiche Savoury Crumb Crust

Mix dry ingredients

  • 1 cup fine whole wheat bread crumbs (I use crackers instead - a dry cracker one that will absorb all the egg)
  • 1/4 cup whole wheat flour
  • 1/2 cup raw wheat germ (I can´t find this in CH so instead I use Linseed) or Linseed (toasted in a fry pan - its like pop corn so use a lid and keep the seed on the move so they don´t burn)
  • 1/2 cup raw oats
  • Herbs - basil, majoram, oregano etc
  • Drizzle in melted butter (1/2 cup) and toss with fork - use oil if you are not so keen on the butter

I have put sesame seeds in the base which also good.

Cheese

  • first layer
  • grated cheese, or parmesan, mozerella - or no cheese

The Filling

Spinach (1/2 lb chopped and steamed) with sauteed onions, dry mustard and nutmeg

Mushrooms (1/2 lb sliced) sauteed with scallions, oregano and thyme

Broccoli ( 1 large stalk) chopeed and steamed with lemon juice and garlic

Tomato Slices (1 - 2 medium toms) sauteed gently with basil and dill

Peppers sauteed with onions and peppers

I used to cook all this separately and what a faff that was so now I biff it all together and saute. Still tastes good - I use courgette in it usually.

The Custard

Beat 3 eggs and 1 cup milk. Pour over or sour cream instead of milk.

Bake 35 - 40 mins... 180 C or 375 F Whats that Gas Mark 4 ?

veggie basket.
grate 3 raw potaoes and 1 onion. Squeeze much of the 'water' out with kitchen roll. Add tblspn olive oil, salt and pepper. use mixture to line a lightly buttered oven-proof bowl, and bake until crispy. Meanwhile, steam a medly of veg, add cheese sauce, sprinkle with wholemeal breadcrumbs and grill til bubbly. Slightly faffy but so tasty and heartwarming in autumn. You can also use the onion/poto mix flat on a baking tray, remove when crispy and serve the veg/cheese on top.

I have a veggie basket abit like that FMF

Vegetable Crust

2 cups carrots - grated
2 cups courgette - grated
1 Parsnip grated or another vege if you don´t like parsnip!
Couple of tomatoes

Salt and pepper or vege stock, herbs

I use the blender on grate - which is much quicker, unless oyu feel you need the exercise.

Instead of squeezing out the excess water like the recipe states I add some polenta and one egg. Grated cheese, parmasan on on top.
Press with fork into a flat pan and bake 180 for 40 mins.

Sweet potoatoes -

roast them, you can scrub or peel skin, its up to you. Then bake them in med temp oven, for about 45- 50 minutes. Then make some garlic,ginger butter, and pile it onto the cooked sweet potatoes. It's nice with a sprinkling of sesame seeds and maybe a drop or two of soy sauce

I am still harrumphing slightly at my complete ignorance of this thread - when exactly were you all planning to tell me about it, pray?

Here is my all purpose VEG STEW:

Fry onions, and whatever else is in your veg drawer (mushrooms, peppers, leeks, aubergines, courgettes, etc). Add root veg (swede, butternut, carrots, pots, parsnips, turnips all taste great), stock, tins of tomatoes,tom puree, a few herbs, soy sauce, paprika etc. Simmer till tender, add some kidney beans, froz sweetcorn, etc. At this point you can also add some dumplings (recipe available on request ie I can't be arsed to find the book) and simmer for another 10 - 15 mins, or serve as is.

If it is too runny either liquidise some of it to thicken it, or pretend it was meant to be like that and call it soup If you are really hungry it goes well with a baked potato, or just some decent bread and butter. Oh god I am so hungry now...

I Love Bananas
BANOFFEE PIE
Ingredients

serves 8

3 bananas
1 tin condensed milk (caramelised)
½ packet ginger snaps
1 packet chocolate digestives
small bar dairy milk (or equivalent)
cadbury's flake
100g butter
whipping cream
Method

Crush the biscuits with a rolling pin or in a food processor.

Melt butter and dairy milk in a bain marie or a pan on a low heat. Add to crushed biscuits and mix thoroughly.

Line a baking tin or tray evenly with mix, including up the sides, then cover and place in a fridge for 30 mins to set.

Slice banana and layer on biscuit base, then pour over an even layer of caramelised milk (not too much as it is very rich). Cover the top of pie with a thick layer of whipped cream.

Sprinkle broken flake all over the top and refrigerate until ready to serve.
