Setting up a second family iPad

I was lucky enough to get a new ipad from DH for Christmas and thought the best thing to do with the old one (which still works, just is a bit old with very little memory) is let the children use it till it can't update the iOS any more. I've been googling family sharing but can't see how I can set up my own Apple ID as the primary account without it mirroring the content on my new iPad to the old one - which would mean clogging it up with content they won't need/use (and probably clogging up my iCloud with their content). Is there a way? Or would it be better to create an entirely new Apple ID for this device so the DC can use it for their own content only? I understand it's frowned on to have more than one Apple ID but as far as I can tell this would be the best option. Any thoughts or experiences of this?

We’ve got 3 iPads currently in use all on one Apple ID but all with different things on them , we turn off the sharing so that if I download something nobody else gets it and vice versa .

Go to Settings- iTunes & App Store and turn off Automatic Downloads for everything you don’t want on the old iPad.

Thanks@RustyBear @Floralnomad. If I use one ID everything will be in my iCloud account though, right? DC have their own IDs (via family sharing with mine) - if we use those will all the stuff they create and download be shared in their own bit of iCloud or take up space in mine, do you know? (I'm reluctant to upgrade my storage as it soon gets expensive.)

I think if you have family sharing it’s best to use that, but I think you will only be able to use one of the DC’s Apple IDs on the old iPad.
The issue of iCloud storage is confusing- support.apple.com/en-gb/HT208147 this says you need to invite family members to share (and can only do it if you have a200gb plan or higher), while this says “If your family members are using Apple's free 5GB plan, they'll be automatically moved to your storage if you're using a larger plan.” So I’m not sure about that one.

You need another Apple ID for the kids iPad. That will keep all the kids content separate from your iCloud account. You can then set up family sharing by inviting that Apple ID to join the family. Once family sharing is set up, you can download any apps you’ve previously bought on your ID for the kids iPad. My son has his own Apple ID on his iPad, if he wants to buy an app it sends me a notification to either allow or deny the app. We also share iCloud storage but have no access to each other’s storage. It’s just 2TB shared with the family account.
